Spicy Roasted Cabbage Wedges


Got cabbage? Great. Make this recipe. It’s very simple!

½ cabbage (cut into 4 wedges)
4 tbsp extra virgin olive oil
1 clove of garlic (minced)
4 sun-dried tomatoes (finely chopped)
¼ tsp dried chilli flakes
1 tbsp dijon mustard
½ handful basil (finely chopped)
½ handful parsley (finely chopped)
1 pinch salt and black pepper


Get your oven up to 200°C

Mix the cabbage wedges through the dressing in the bowl and pop them onto a baking tray, reserving whatever dressing is left in the bowl.

Cover the tray with foil and roast for 40 minutes, then take off the foil and pop them back for another 15 minutes to get crispy and brown.

Remove from the heat, pop them back into the mixing bowl with the herbs and the leftover dressing and give them a good toss before serving.
