Mother-in-law’s Coronation Chicken

This is literally my mother-in-law’s coronation chicken.I was going to write something funny about it, but it is so good there is actually nothing funny to say

1 whole chicken
1 tsp curry powder
1 tsp ground coriander
½ tsp tumeric
½ cup mayonnaise
½ cup double thick yoghurt
1 handful fresh coriander (very roughly chopped)
¼ cup toasted almonds


Put the chicken in a small or medium pot and cover 1 it with water.

Simmer it gently for 40 minutes, or until it is completely cooked through, then leave it to cool in the water until it is room temperature.

While the chicken is poaching, combine the curry powder, coriander, turmeric, mayo and yogurt in a bowl and leave them to to infuse in the fridge.

When the chicken is cool, set the broth aside for another meal, and use your hands to pull the meat off the chicken. Then use your fingers to shred it into bite sized chunks.

Mix the sauce through the chicken with the coriander and tip it out onto a platter.

Scatter with toasted almonds and some extra coriander leaves and serve.
