Gomen Wat

YIELDS
4 Servings

300 g spinach (rinsed, trimmed and chopped)
1 ½ cups water
1 tbsp coconut oil
1 medium onion (chopped)
¼ tsp ground allspice
½ tsp ground tumeric
3 cloves garlic (finely chopped)
1 medium red pepper (roughly chopped)
1 medium yellow pepper (roughly chopped)
1 medium green pepper (roughly chopped)
1 tbsp fresh lemon juice
1 tbsp ginger (minced)
1 tsp paprika
1 pinch salt and pepper

Method

Heat the oil in a large pan over a medium heat and add the onions, allspice and turmeric to cook until the onions tender and golden brown.

Now add the garlic and sauté for a minute then add spinach and the water and simmer gently for 15 minutes until the water has almost completely evaporated.

Add the red, yellow and green peppers, lemon juice, ginger and paprika and cook for 5 minutes until peppers are soft.

Check the seasoning, remove from the heat and serve immediately.
