Game Fish Tiradito

Tiradito is a Peruvian dish of raw fish, cut in the shape of sashimi, and of aspect similar to crudo, and carpaccio, in a spicy sauce

500 g barramundi, yellowtail or yellowfin tuna fillet ( boned and skinned)
125 ml lime juice (juice of 5 limes)
1 whole red chilli (finely chopped)
1 tsp amarillo paste (or any medium strength chilli paste)
1 clove garlic (diced)
4 tbsp extra virgin olive oil
½ handful fresh coriander (roughly chopped)
1 tbsp black sesame seeds (toasted)
1 tbsp white sesame seeds (toasted)
1 pinch salt and pepper (to taste)

Method

Blitz the lime juice, chilli, amarillo paste, garlic and oil in a small jug with a stick blender.

Mix through the coriander and season to taste with salt and pepper.

Slice the fish into neat sashimi-style slices and lay them neatly on a serving dish.

Pour the tiradito marinade over the fish and pepper with sesame seeds and any leftover coriander.
