
17 Sep Charred okra with lemon and coriander dressing
If you’re not keen on firing up the BBQ, you can char them over a gas flame.

Get your BBQ up to a medium heat then make the dressing.
Whisk the olive oil, lemon juice and zest, onion, garlic, chilli and coriander together in a large mixing bowl and season with salt and pepper.
Place the okra on the grill or flame for 3 minutes on each side until evenly charred.
While they’re still hot, add the okra to the dressing and toss them to suck up the dressing.
Tip them onto a platter and serve hot or cold.
