
04 Aug Cauliflower-and-Cheese Tots
Bite-sized cauliflower cheese! Could this be the greatest invention ever? They may look like a pain to make, but they’re actually very easy.

Preheat the oven to 180°C
Line two baking trays with silicone baking paper.
Melt together the cream and butter.
Place the cooked and drained cauliflower into the bowl of a food processor with the melted cream and butter, and blend until fine. Remove from the food processor and place in a mixing bowl. Allow to cool completely.
Once the cauliflower mixture is cold, stir in the egg yolks, grated cheese and baking powder
Whisk the egg whites until stiff.
Fold 1/4 of the egg whites into the cauliflower mixture, followed by the rest.
Using a round nozzle, fill a piping bag with the cauliflower mixture and pipe little tots onto the lined baking tray. Make them about 3cm long, and leave a little space between each one.
Bake for 15-20 minutes until they are golden.
Serve immediately with homemade tomato ketchup.
If you donít have a piping bag and nozzle, make the tots using two teaspoons; scoop with one, and use the back of the other to scrape out the tot.
Remember to eat them while they’re hot!
