300 g okra
4 tbsp extra virgin olive oil
40 ml lemon juice (juice and zest of a big fat juicey lemon)
¼ medium red onion (super-finely chopped)
1 clove garlic (minced)
½ whole red chilli (finely chopped)
½ handful coriander (roughly chopped)
Get your BBQ up to a medium heat then make the dressing.
Whisk the olive oil, lemon juice and zest, onion, garlic, chilli and coriander together in a large mixing bowl and season with salt and pepper.
Place the okra on the grill or flame for 3 minutes on each side until evenly charred.
While they’re still hot, add the okra to the dressing and toss them to suck up the dressing.
Tip them onto a platter and serve hot or cold.
