Fantastic Fondue

Fondues may seem pretty passé, but they’re great fun as long as you’re not wearing chocolate-brown corduroy pants… They’re also a great way to keep teens entertained – by doing the cooking themselves while enjoying a selection of interesting new tastes.

Preparation time: 30 - 60 mins

Cooking time: 10+ mins

Serves: 6 - 8

  1. Pour the wine into a saucepan and bring it to the boil. Simmer until it has reduced by half.
  2. Add the cream and mustard and continue to simmer until the cream thickens slightly – about 5-10 minutes. Remove from the heat. (NB at this point: once the cheese is mixed into the sauce, you need to serve it immediately. If you want to finish it off later, allow the cream sauce to cool and reheat it just before serving.)
  3. Add the cheese to the hot sauce and stir until melted. Pour it into a fondue pot and serve immediately with a variety of bits and pieces for dipping.
